Crackling Sourdough Cinnamon BlueBerry French toast bake

I feel at a loss for words.. only because how can speak of something SO great and SO BEAUTIFUL?! This Crackling Cinnamon Blueberry French Toast Bake speaks for itself, but I would also love to introduce it to you if you would allow me the honor! This Beautiful breakfast casserole originated with my lovely aunt Kelsey. She would make something similar for us when we were at the cabin together.. and as far as the exact recipe goes, I am not totally sure, because she didn’t know either! So using my taste buds and my heart, I crafted away and created the most inviting and perfectly soft yet tasteful and crunchy recipe for you and your crew.

This recipe can be made ahead of time, stored overnight in the fridge or you can assemble and freeze for later too! It is the perfect EASY recipe for a fun weekend brunch, whether you are trying to flex for your family, or simply provide an elegant but filling meal for a shower you are hosting or a holiday or birthday! It is a total staple that you are going to inherit and make for decades to come! INGREDIENTS FOR THE FRENCH TOAST

▢ 1 Loaf Sourdough Bread cut in 1 in cubes

▢ 8 Eggs

▢ 1 Tablespoon Vanilla Extract

▢ 2 Cups Oat Milk

▢ 2 Teaspoons Almond Extract

▢ 1 Cup Frozen Wild blueberries

▢ 1 Tablespoon Coconut Sugar

▢ 1/2 Cup Buttermilk (or non-dairy cream)

▢ 4 oz Cream Cheese (or non- dairy cream cheese)

▢ 1/2 Teaspoon ground cinnamon

▢ 1/2 Teaspoon salt

INGREDIENTS FOR THE CINNAMON TOPPING

▢ 1/4 Teaspoon Salt

▢ 1 Teaspoon ground Cinnamon

▢ 1/4 Cup All Purpose Flour

▢ 1/4 Cup cold butter cut into chunks

▢ 1/4 Cup Coconut Sugar

INSTRUCTIONS

  1. Evenly lay out bread cubes in a greased 9x13 glass baking dish

  2. Sprinkle the frozen blueberries and cream cheese chunks on top of the dry bread

  3. In a medium bowl, whisk the:

    ▢ 1 Tablespoon Coconut Sugar

    ▢ 1/2 Cup Buttermilk/ cream

    ▢ 2 Cups Oat Milk

    ▢ 8 Eggs

    ▢ 1 Tablespoon Vanilla Extract

    ▢ 2 Teaspoons Almond Extract

    ▢ 1/2 Teaspoon Cinnamon

    ▢ 1/2 teaspoon Salt

  4. Pour this evenly over the Bread and do not mix. Cover with plastic wrap and refrigerate for 4 hours or overnight. Eep this part is SO FUN! Just looks so beautiful with the frozen blueberries bleeding into it. WOW. amazing.

  5. In a separate bowl, mix together Cinnamon Topping Ingredients until it forms a lumpy mixture. Place in container and refrigerate as well.

  6. After refrigeration, preheat oven to 350° and remove plastic wrap. Cover with tinfoil now and back for 30 mins

  7. remove and evenly sprinkle topping over the french toast mixture

  8. Bake for 50-60 mins with lid off. (Note: halfway through baking, If you notice that there are large dry patches, pour 1-2 tablespoons of melted over top of it. And continue baking)

  9. Enjoy!
